 According to a National Restaurant Association survey of over 1500 chefs, several of the top food trends (for dining out) for the coming year will reflect changing social trends and interest in health.
- Children’s meals and children’s nutrition. You can thank Michelle Obama for that one. Her efforts to improve childhood nutrition and fitness have garnered a lot of press coverage. Add to that the fact that she actively involved the food industry and numerous famous chefs has given this high visibility. People might not be so good about taking care of themselves, but they are generally better and more concerned about taking care of children!
- Locally grown and/or sustainable foods. Desire for quality food that doesn’t harm the environment spurs this on. We all know that fruits and vegetables taste better when picked and eaten within a day or two. Who wants to eat something that was picked 2 weeks ago and shipped cross country when the same food is cheaper and fresher locally? Sustainable foods (like seafood) help preserve our resources, protect that part of the food chain and reduce our potential exposure to toxins.
- Food allergies and intolerances always receive a lot of press. This year expect to see more sensitivity to these as well as more availability of gluten-free foods for those with celiac disease.
The ongoing focus on obesity and health in the US will certainly benefit from these trends. I’m looking forward to seeing these changes, and hopefully more. Personally I’d like portion moderation and healthier preparation methods to be a focus.
