Healthy Whipped Sweet Potatoes

A perfect side dish to serve this time of year!

Whipped Sweet Potatoes
Serves 3-4

3 medium sweet potatoes, peeled and cut into 1-inch pieces
1 small onion, diced
1 Tbsp Dijon mustard
1 Tbsp margarine
1 Tbsp honey
2 cups low sodium chicken broth
Salt and pepper to taste

- Melt margarine in a large pot over medium heat. Add onions and sweet potatoes; sauté for about 5 minutes or until onions become soft.
- Add all remaining ingredients except for salt and pepper; bring to a boil.
- Cover, reduce heat and simmer for 20 minutes or until sweet potatoes are easily pierced with a fork.
- Drain water.
- Place sweet potato mixture in a food processor or blender and mix until smooth.
- Add salt and pepper to taste and serve.
