 I was feeling a little uninspired about recipes this week. Before, all I had to do was ask and Josée would whip up a recipe for me in a flash. I swear that woman can write recipes in her sleep. But now she’s all the way over in France eating delicious food, drinking great wine, generally loving life and blogging about all of it. Thankfully there are a million different ways to communicate now, because I needed her today. Without further adieu, I give you a simple and delicious recipe that is sure to please. Apples are in season right now which makes this a perfect fall dessert.
Baked Apples a la Josée Serves 4
Ingredients
2 large apples (try Rome Beauty, Gala, Pink Lady or Macintosh) 2 Tbsp butter or margarine Cinnamon ½ cup sweetened chestnut puree Whipped cream optional
Directions
Preheat oven to 350 degrees F.
Wash and dry apples. Cut the apples in half lengthwise and remove the core but leave any stems intact. Place apples in baking dish with ½-inch water. Divide butter among each core cavity and sprinkle with cinnamon.
Bake apples until the flesh is tender and they're bubbly and perfect looking, about 30 minutes. Top each apple with 2 Tbsp chestnut puree and a dollop of whipped cream.
Recipe Note: Look for sweetened chestnut puree in the imported gourmet section of the grocery store.
