 This recipe is a perfect addition to any late summer BBQ! It’s also an excellent way to get kids to eat fruit and the leftovers work great for lunch the next day. Cut into cubes and throw them in a salad or enjoy alone.
Ingredients
1 fresh pineapple, peeled and cut into 1/2-inch rings (core if desired) 2 Tbsp butter or margarine ¼ cup brown sugar 1 tsp vanilla extract 2 Tbsp water
Options:
- Substitute dark rum for the water - Use 1 Tbsp lemon juice instead of the vanilla extract - Top each pineapple ring with a small scoop of vanilla ice cream just before serving
Directions
Preheat your grill to medium-high heat.
Melt butter in the microwave over low heat then add brown sugar, vanilla and water. Mix well. Lay pineapple rings flat in a baking dish and brush with glaze until both sides are coated. Set some of the glaze aside for later.
Grill the pineapple rings on lowest rack about 2-3 minutes per side, turning once. Only turning once will allow those nice grill marks to form. When done, transfer pineapple rings to a large serving platter and drizzle with remaining glaze.
