Senseitized Quesadilla Casserole & Giveaway Winner!

We’ve seen a lot of advertisements for McCormick’s new Recipe Inspirations pre-measured spices and recipe cards. We were intrigued. One of the recipes, Quesadilla Casserole, looked especially interesting. Kind of like a Mexican lasagna. It also looked like a perfect recipe to be “Senseitized”.

In addition to the spices and some vegetables, the original recipe called for ground beef, flour tortillas and cheddar cheese. By making some changes to these items we were able to drop about 100 calories, 2/3 of the fat AND double the fiber per serving! Check out our recipe below:

Senseitized Quesadilla Casserole
Serves 8

1 each McCormick’s Recipe Inspiration Quesadilla Casserole spice card
3 cups Boca Meatless Ground Crumbles
½ cup onion, chopped
2 (8 oz) cans tomato sauce
1 (15 oz) can black beans
1 (11 oz) can whole kernel corn (recipe calls for slightly smaller can)
1 (4 ½ oz) can chopped green chiles
6 (8-inch) whole wheat tortillas
2 cups Sargento Reduced Fat shredded 4 Cheese Mexican


Follow the directions on the recipe card for preparation. It takes only about 15 minutes to mix and heat the filling. Then another 15-20 minutes to assemble and bake the casserole. I made 3 layers instead of 2 as the tortillas were big enough to completely cover ½ my baking dish each.

The result was a surprisingly good dish that everyone loved! The filling is delicious and the corn adds a sweet crunch that really balances the other flavors.

Nutrition Information (per serving):

Old Recipe – 391 calories, 19 g fat, 4 g fiber
Senseitized Recipe – 308 calories, 7.5 g fat, 8 g fiber

Tips:

- To drop the calories by about 30 more per serving, use 4 tortillas instead of 6.
- If vegetarian isn’t your thing, try ground turkey instead of ground beef.
- You can also make this dish enchilada-style. Spoon filling into tortillas, roll and place in a baking dish. Cover with your favorite enchilada sauce and sprinkle with cheese. Then bake as your would for the casserole.

While we’re on the subject of quesadillas check out this crazy disgusting Mac & Cheese Quesadilla off the KIDS menu at Friendly’s. It has over 1,000 calories and 50 grams of fat! Add the drink and dessert that comes with the meal and it jumps to over 2,000 calories for just one kid’s meal. That’s just downright wrong (even for an adult)! Shame on you Friendly’s.
