Easy Seaweed Salad Recipe

Since Jennifer shared some great reasons to add seaweed to your diet earlier this week, I thought I would share a quick and easy seaweed salad recipe to get you started.

This recipe is made using wakame seaweed. Wakame is a thin and stringy seaweed that is deep green in color and used in making seaweed salad and miso soup. Wakame is common in Japanese and other Asian cuisines. You can find it in most Japanese specialty stores or health food markets.

Easy Seaweed Salad Recipe
Serves 4

1 oz. dried wakame seaweed
4 Tbsp rice vinegar
2 Tbsp sesame oil
4 Tbsp soy sauce
1 tsp fresh ginger, grated
1 tsp sugar
1 garlic clove, minced
3 green onions, thinly sliced
2 Tbsp toasted sesame seeds

Rinse the wakame, place in a bowl, and cover with water. Soak until soft; about 5-6 minutes.

Meanwhile, combine vinegar, sesame oil, soy sauce, ginger, sugar, green onions and garlic at the bottom of a serving bowl. Stir until sugar is dissolved.

Once wakame is soft, squeeze dry and trim away the spines (if the pieces are whole) then slice or chop into thin strips. Toss seaweed strips with dressing and sesame seeds and serve at room temperature or chilled.
