 I’m sure most of you have heard of fried green tomatoes, but this recipe is a much healthier version of the popular southern side dish. I’ve never really been a huge fan of tomatoes unless they’re served in a salad or as a garnish on sandwiches. Since I’m always open to trying new things, I decided to experiment with grilling some green tomatoes a few weeks ago and absolutely loved them! This recipe is a perfect way to use those tomatoes that never quite ripened and a wonderful addition to any summer BBQ.
Grilled Green Tomatoes Serves 4-6
4 large (3-4” diameter) green tomatoes 4 Tbsp extra-virgin olive oil 2-3 garlic cloves, minced Salt & pepper to taste
Options: - For fresh flavor add 2 Tbsp fresh chopped herbs like oregano or basil - For a spicy kick add 1-2 tsp Cajun seasoning
Preheat grill to high and lightly oil rack.
Cut tomatoes into ½-inch thick slices and place on a baking sheet. Combine oil, garlic and herbs or Cajun seasoning (if applicable) in a small bowl and mix well. Season tomatoes using salt and pepper then brush with oil mixture on both sides. Place tomatoes on the grill and cook on each side for 3 to 5 minutes or until tomatoes are tender and nicely browned.
