 We’ve been doing a lot of celebrating in my household lately. Mainly birthdays, going away parties, weddings and even your occasional ‘World Cup’ watching party. I must say though, last night’s festivities were a bit more special because the night was dedicated to my husband who just received a raise (hooray hubby!). So, I couldn’t think of any better way to celebrate this huge accomplishment than having a real manly-man dinner: steak, smashed potatoes and grilled corn on the cob.
We all know men love any meal on the grill; and since its summer I try to grill as much as I can! I’ve been hearing such a buzz around grilled corn on the cob, which I still had yet to try. My friend at work (thanks Lauren!) even went the lengths of stating that I will never eat corn any other way but grilled again. So I just had to see for myself what the big fuss was about and if it really lived up to all the hype…and it sure did! We cleaned those cobs like it was nobodies business!
If anyone out there is like me and has gotten the grilled corn on the cob memo a little late, I HIGHLY recommend trying it! Get creative with it too. You can try adding some different spices and herbs to mix it up a bit. I promise you won’t be disappointed. I kept it plain and simple this time around. Here’s the recipe:
Grilled Corn on the Cob Serves 4
4 ears corn, husked and cleaned 4 square sheets aluminum foil 2 Tbsp butter or margarine Salt & pepper to taste
Preheat grill to medium heat (about 350 degrees).
Tear 4 large pieces of aluminum foil; make sure they are big enough so you can wrap it around the corn. Place corn in the center, diagonally on each piece.
Melt butter in the microwave and brush each ear of corn. Add salt and pepper. Optional: Here’s where you can get creative and add other spices like Cajun seasoning, fresh or dried herbs or garlic butter to give the corn some extra kick.
Fold the aluminum foil tightly around the corn. Place corn on the grill, rotating every so often. Cook for 10-15 minutes. Remove from grill. Carefully unwrap each ear of corn and place it directly on the barbecue rack for about 2 minutes or so, rotating every minute. Be careful when removing the corn, it can be very hot! They should have that nice charred look to them.
