 I love to grill! Lucky for me, we can grill year round in South Florida. One of my favorite things to do is make an entire meal on the grill. That way my boyfriend thinks he can take all the credit for “cooking”. Never mind that I spent hours marinating delicious cuts of meat and washing loads of colorful veggies. Well, maybe not hours, but you get the idea.
This recipe is a perfect way to do an “all-in-one” meal on the grill. A lot of people steer away from grilling fish because it can get tricky, but fish packets are super easy, healthy and delicious! You can vary the fish, vegetables and seasonings according to your personal taste.
Grilled Fish Packets Serves 4
1 pound tilapia, sole or flounder fillets, cut into 4 portions ¼ cup lemon juice 2 Tbsp extra virgin olive oil 2 Tbsp fresh parsley, chopped 2-3 garlic cloves, minced 1 medium onion, thinly sliced 1 red, yellow or orange bell pepper, thinly sliced Salt & pepper to taste
Preheat grill to medium heat.
Combine lemon juice, oil, parsley and garlic in a small bowl.
Using heavy duty foil, make four squares large enough to fit a single piece of fish then spray the centers with cooking spray. Place each piece of fish on a piece of foil, then season and drizzle with oil mixture. Cover the fish evenly with onions and peppers. Fold the foil over the fish so the edges meet. Seal edges, making a tight ½ -inch fold then fold again. Allow space on the sides for circulation.
Grill the packets for 10 to 15 minutes or until the fish flakes with a fork. Allow packets to sit for a few minutes before opening to avoid the hot steam. Serve with grilled corn on the cob and grilled fruit for dessert.

That sounds really great! We don't have a grill, but I do these types of packets in the oven sometimes. The meat is always so tender.
