Since today is Earth Day, I thought I’d share a cool and refreshing vegetarian soup recipe that takes only minutes to prepare.
Fresh Cucumber Avocado Soup
1 ripe avocado, peeled, pitted and chopped 2 English cumbers, peeled and chopped 1 medium tomato, halved and seeded 8 oz plain low fat yogurt ¼ cup fresh chives, chopped 1 Tbsp lime juice 1 tsp salt 1 Tbsp Jalapeno, seeded and chopped ½ cup ice cubes Salt and pepper to taste
Wash and prepare vegetables. Place all ingredients in a blender or food processor and blend until it reaches a nice smooth homogeneous consistency. Taste and adjust seasonings with salt, lemon juice and/or hot sauce or cilantro. Serve right way with some chilled shrimp and tortillas or a few slices of crusty bread (for the vegetarians).
Enjoy!
Peace and love,
- Josée
