 In the spirit of St. Patrick’s Day I wanted to share some super healthy seasonal green foods. Not only are these foods at their peak of flavor and freshness this time of year, they’re more affordable, packed with good-for-you nutrients and low in calories to help keep your weight under control.
By purchasing local seasonal foods, your food dollar goes directly to the farmer, your family will enjoy the health benefits of eating fresh, unprocessed fruits and vegetables and you help the environment by eliminating the damage caused by shipping foods thousands of miles. Buying produce in-season also provides a great opportunity to try new foods and to experiment with seasonal recipes. And it simply tastes better!
Here are two of my favorite seasonal green foods. Enjoy!
Asparagus
I love asparagus! It’s packed with heart healthy folate and acts as a natural diuretic because it’s low in sodium, high in potassium and contains the active amino acid asparagine. Asparagus is also believed to help with hangovers (which could come in handy for some of us tomorrow).
Steam and serve with a lemon or garlic vinaigrette, roast under the broiler and sprinkle with salt, pepper and parmesan cheese or toss some chopped asparagus into your favorite pasta dish or into an omelet.
Kale
Kale is arguably one of the healthiest veggies around this time of year. It’s a good source of antioxidants, fiber, calcium and manganese. It also contains nutrients that are believed to protect against cancer, promote lung health, boost immunity and provide cardiovascular benefits.
Kale can be used and prepared in much the same way as spinach. Sauté with fresh garlic and sprinkle with lemon juice and olive oil before serving, combine chopped kale, pine nuts and feta cheese with whole grain pasta drizzled with olive oil or try my warm kale salad recipe.
