Healthy Recipe - Curried Pumpkin Soup

Try this easy and delicious recipe to incorporate more health promoting turmeric into your diet.

Curried Pumpkin Soup

Serves 4

1 Tbsp olive or canola oil
1 small onion, diced
2 garlic cloves, crushed
8 oz button mushrooms, sliced
2 Tbsp white flour
1 Tbsp yellow curry powder – to taste
1 tsp turmeric
2 cups vegetable or chicken broth
1 – 14 oz canned pumpkin
1 cup milk or low fat coconut milk
Salt and pepper to taste

Optional:
Nutmeg
Chili powder
1 Tbsp honey

In a medium size sauce pan over medium heat, sauté onions, garlic and mushrooms for about 10 minutes or until soft. Add flour and curry powder while stirring and cook for 1 minute. Slowly add broth while whisking to avoid any lumps. Add pumpkin and seasonings.

Add milk before serving just to heat it through.

If you prefer a more homogeneous and creamy texture, you can purée the soup using a hand held blender, regular blender or food processor.
