Creative Leftover Ideas

Even if you’ve been careful not to prepare high fat and high calorie foods for Thanksgiving, you probably still have a refrigerator FULL of turkey and fixin’s. The excitement over these holiday foods fades after eating them for two or three days. But in today’s budget conscious economy it’s important to maximize your food dollars. Stretching leftovers is one way to do that.

Here are some tips and recipes to keep you enjoying all your holiday leftovers!

Turkey Carcass
Makes the best soup ever! Cut off most of the meat, break into smaller pieces and freeze to make turkey soup at a later date. Here are a few simple recipes to get you started. Make sure to add lots of veggies for a hearty, filling soup.
Vegetables and Rice

Freeze these to add to your soup later or use in any of the recipes below.

Turkey Meat
Stuffing

Use in one of the recipes below or freeze for later.
  • Turkey Quiche
  • Stuffed Pork Chops - Slice thick cut pork chops along the side and fill center with stuffing before baking.
  • Meatloaf - Replace breadcrumbs with crumbled stuffing.
Sweets and Desserts

Hopefully you’ve sent these dishes home with family and friends. Remember if you keep them around, you’ll only end up eating more than you should.
