Super Simple Dinner Omelet

Picture this. You just got home from a long day at work. You’re tired, hungry and have no idea what to make for dinner. You survey the fridge and peek in the freezer. You definitely don’t want to wait for that frozen chicken to defrost and cheese and crackers just won’t cut it. You also remember the commitment you made to avoid the fast food drive thru this week. What to do?

How about breakfast for dinner! This recipe is so simple and can be easily adapted depending on your tastes and available ingredients.

Super Simple Dinner Omelet
Serves 2

2 Eggs
4 Egg whites
2 cups Frozen pepper & onion mix
2 Tbsp Parmesan cheese
1-2 tsp Extra virgin olive oil
1 clove Garlic, minced
Salt & pepper to taste

In a small bowl whisk eggs, egg whites and seasonings; salt, pepper and your favorite herbs like basil or parsley. Can also add 1-2 Tbsp of milk or water to make the omelet fluffier. Set aside. Heat oil in a non-stick medium sized pan over medium heat. Add vegetables, garlic and sauté until vegetables start to brown. Pour egg mixture into the pan and shake to distribute evenly. You may want to add some cooking spray before you add the eggs to prevent sticking as the vegetables tend to soak up the oil. When eggs are all cooked through, add cheese then use a large spatula to fold one side of the omelet over the other. Top with chives or scallions if available. Serve with toast, potatoes or beans (black or baked) and fresh fruit for dessert.

For super quick prep use frozen vegetables; no washing or cutting necessary, just throw them right in the pan. Defrost them in the microwave for a few seconds to speed up the process even more. Try frozen spinach and feta cheese or frozen broccoli and cheddar. You can also use any fresh, cooked or leftover vegetables you have on hand such as tomatoes, onions, mushrooms, zucchini and asparagus.

    Breakfast for dinner, dinner for breakfast... hey, it all comes down to what works for you!!! I think eggs for dinner is FINE!

    When I was little, we had soup all the time for breakfast & dinner... to me, it does not make any sense to limit yourself by these definitions of what you should be eating at what time!!!

    I have protein oatmeal for dinner lots of times!

    Recipe sounds YUMMY!

    I LOVE breakfast anytime! If breakfast is a cuisine, it would be m favorite cuisine!
    And I adore omelets...that omelet I could eat any time of the day!
