 My favorite food has to be smoked salmon. It’s a close tie with truffle pasta or almost anything having to do with truffles, but since I can remember, smoked salmon has been number one. I add smoked salmon to pasta with sautéed green onions or with cream and poppy seeds. I eat it on bagels with cream cheese or plain with onions or blueberries. Over the years I have gotten sick many times when restaurants served it when it was not fresh, but it doesn’t stop me, I still eat it.
I found a cooked smoked salmon at Costco that is just fantastic! Because it’s cooked it has a different texture but it’s still so good! I always keep some in the fridge in case someone drops by or when I don’t know what to prepare for dinner. I make a simple fresh salad using the salmon and colorful vegetables. It’s perfect for a light dinner and you don’t really need bread, but cleaning the plate with it is just as good.
Smoked Salmon Salad Serves 4
½ lb Cooked smoked salmon 1 small Cucumber 2 medium Tomatoes ¼ medium Red onion Juice of 1 Lemon 2 Tbsp Extra virgin olive oil
Chop all ingredients into similar size pieces (1/2 of a dice). Mix with olive oil, lemon juice and fresh black pepper. Adjust the amount of vegetables to your personal liking.
That’s it. A mouthful of fresh flavors…you must try it!

Unfortunately I am not a salmon fan since it has good omega 3 fats but that sure sounds goods!!!!
