Emeril Goes Green

Emeril Green…no, it’s not a typo for emerald green. I mean Emeril Legasse, the king of pork fat, has gone green…and healthy!

Emeril has teamed up with Planet Green, a Discovery channel website. When I first heard this, I thought I must have heard wrong. Emeril and healthy seemed kind of like calorie-free chocolate, it just didn’t compute. Don’t get me wrong, I love watching his shows. But I cringe when I see how much fat goes into a lot of the recipes.

While some of the recipes on the site are still quite high in fat, they do use lean meats, whole grains and lots of veggies. Emeril’s beloved pork fat has been traded for olive oil, a much healthier alternative.

Many people don’t know that Emeril has been using organic and locally grown foods in his restaurants for over 20 years (yeah Emeril). So Emeril Green is just an extension of what he practices daily.

One of the great things about this new site is that there are videos showing you how to prepare most of the dishes. I looked through the recipes and here are a few Emeril specialties that would make a great and healthy grilled summer meal. With 4th of July weekend just around the corner, you’ve got a great excuse to try them!

Forentine Style Buffalo Steak Salad
Grilled Citrus and Herb Marinated Shrimp
Grilled Jicama Salad
Grilled Pineapple with Soy-Agave Dipping Sauce
