Pork Tenderloin With Artichokes & Mushrooms
Here’s a tasty dish for those who love their protein. Serve it with a side salad or green vegetable for a lean, low carb and delicious meal!


Serves 4

½ lb Pork tenderloin, raw, sliced ¼ inch thick (or raw chicken)
1 Tbsp Olive oil
1 Medium onion, sliced
1 lb Fresh sliced mushrooms or 8 oz canned slice mushrooms
14oz Canned artichokes, quarter
2 Crushed garlic cloves
1 Tbsp Fresh rosemary (or ½ Tbsp dried)
2 Tbsp Fresh parsley (or 1 Tbsp dried)
½ c Chicken broth or white wine

Sauté pork in oil over medium heat with onions until golden brown; add garlic, mushrooms & artichokes. Cook until vegetables are cooked through and season to taste with salt, pepper, rosemary and parsley. Add broth or wine and simmer for 5 minutes for the flavors to mix and to make a thin sauce. Serve over polenta, noodles or with boiled potatoes.
