 In the spirit of spring, eating outdoors and limiting prep and cooking time, here’s a quick and healthy brunch or lunch idea.
Smoked Salmon Tostada Serves 4
4 6” Whole wheat tortillas 4 oz Whipped cream cheese 6-8 oz Smoked salmon ½ c Green onions, sliced
Toast tortillas under the broiler for 2-3 minutes until golden brown. Spread room temperature cream cheese over tortillas, layer sliced smoked salmon and sprinkle with green onions. Garnish with fresh dill or capers if desired. If you want to impress your guests, place little scoops of caviar all over the tostada.
Serve with a baby mixed green salad for a light meal. To cut down on dishes, put the salad right on top of the tostada.
You can use this idea to create little appetizers too. Simply use large poppy seed bagels and slice little “rounds” or slices that look like coins. Spread some cream cheese on each round, place a piece of smoked salmon and top with a small slice of fresh onion or diagonally sliced green onions. Again, you may add a little dollop of caviar to step it up a notch. Arrange all smoked salmon topped mini bagel rings on serving platter. Your guest will love it.
