 When the temperature drops, I always want something warm like soup or hot tea, and I want it now! As you know by now, I often make a big batch of soup and keep small portions ready to heat in the freezer, but right now I want chicken soup! I have been making this quick tasty soup, or some variation of it, for years.
Lately it’s been cold in south Florida. Even though I grew up in Montreal, I do not handle cold temperatures well at all, and after living in the Caribbean a few yeas ago, I was done. I’m still always worried about being cold, so I always bring a sweater. Like today, its 50 degrees and I have on wool pants, a cashmere sweater and a leather jacket! Of course I’m hot sitting at my desk right now, but I’m ready for when the sun goes down and the temperature drops to 40. When I get home I know exactly what I am going to have for dinner, same as yesterday and the day before; my chicken and Napa cabbage soup. It doesn’t get simpler then that!
Hot Napa Cabbage Soup 12 oz chicken both 1-2 cup thinly sliced Napa cabbage 5-10 drops sesame oil Chili paste or hot sauce to taste (optional) Warm broth over medium heat. While the chicken broth is heating, thinly slice cabbage right into the soup bowl. Add chili paste or hot sauce to the broth (start with a small amount and adjust according to tastes and heat tolerance), stir and pour over raw cabbage. Add sesame oil to taste, and that’s it!
Variations: - Use vegetable broth of choice
- Use fresh or frozen spinach instead of Chinese cabbage
- Use any other type of cabbage; red, green, curly or bok choy
- Add thinly sliced cooked chicken or shrimp
- Add a beaten egg into the hot broth before adding vegetables
