Don’t Pass on the Turkey Soup

After all the turkey at Thanksgiving dinner and the turkey sandwiches the day after, who really wants turkey soup? Me…I love turkey soup! I look forward to it all year. The best thing about turkey soup is that some of the best ingredients are fantastic sources of vitamins and minerals. This year make a nice soup with your leftover turkey and some of my favorite healthy ingredients. It won’t just taste good, it will be good for you!

Carrots – They’re high in vitamin A which is a heart healthy vitamin. The sweet taste goes great in turkey soup.

Leafy Greens – Use kale or spinach in your soup for a mega dose of vitamins. Leafy greens have a lot of lutein which helps with heart health. They also contain antioxidants which may help prevent cancer, heart disease and stroke.

Potatoes – Cut up some potatoes in your soup for extra vitamin C and potassium.

Onions, Leeks & Scallions – These are great sources of vitamin C, chromium and manganese.

Turnips – These are high in vitamin C and fiber. Dice them up to add a nice texture to your soup.

Beans – Any kind of beans can be used in turkey soup. Black beans, kidney beans or chickpeas are great. They have a great flavor and are high in fiber.
