Keep Lettuce Fresh & Crisp

Living alone or being the only person in your home who eats salad may be a problem for some. When you buy lettuce you have to eat it somewhat fast or it tends to goes bad. But I found a great way to keep lettuce fresh and crisp for almost a week!

As soon as you get home form the store, wash the lettuce leaves under cold running water. Gently wipe off “most” of the excess water and layer leaves on a dish towel. Layer another dish towel on top and loosely roll, then put in a plastic shopping bag. Tie the bag with a loose knot and store in the fridge.

If you have to make a quick salad before the lettuce goes bad here’s an idea:

Salad with Eggs and Swiss cheese
2-3 cupsCrisp lettuce
2Boiled eggs cut into wedges
1/3 cupShredded Swiss, Gruyere or cheddar cheese
2 TbspVinaigrette or favorite dressing

Roughly break lettuce into bite size pieces, mix with vinaigrette and plate. Display egg wedges in a circle and top with shredded cheese.

That’s it and it’s a great meal for one!
