
As much as I like to try new foods, at home I tend to be a creature of habit. This is especially true when I’m tired or rushed. One of my favorite ‘no time to cook’ meals is a quesadilla. The two main ingredients are easy to keep on hand and the basic recipe adapts easily to whatever you happen to have in the kitchen.
Think of it like a grilled sandwich, just about anything goes. Try some of my suggestions below, or make up your own. I like to serve it with a few cut up veggies or baby carrots on the side to balance the meal.
| Basic recipe: | 2 | 6” flour or whole grain tortillas | | ¼-1/3c | Shredded low fat cheese (I like Sargento Light) | | Butter flavored or non-stick cooking spray | Place a non-stick frying pan over medium heat. Spray one side of 1 tortilla with butter flavored spray (or non-stick cooking spray) and place sprayed side down in the pan. Sprinkle evenly with ¼- 1/3 cup shredded low fat cheese, then add any other seasonings or ingredients you wish (see below). Cover with the second tortilla and spray top with cooking spray. Flip when bottom tortilla begins to turn golden brown. Toast second side, cut into wedges and serve with a dollop of fat free sour cream.
Suggested optional seasonings (sprinkle inside): - Garlic powder
- Onion powder
- Basil (dry or fresh)
- Hot sauce, BBQ sauce, Thai peanut sauce
