Last week I wrote about my famous Bellini bar and showed you how easy it is to add colorful fruits loaded with antioxidants and nutrients to any party. So today, I want to share with you this delicious five minute dessert that’s super healthy and always a huge hit (even a dietitian can serve it with pride)!
Sherbet and Berry Filled Chocolate Cups
4 Dark chocolate cups 2 cups Sherbet 2 cups fresh berries (whatever you prefer or is available; blueberries, raspberries, or blackberries)
Fill each chocolate cup with a ½ cup scoop of sherbet and top with ½ cup berries. How easy is that?
The nice thing about this dessert is that you can keep the chocolate cups in the fridge for a long time. Same thing with the sherbet, you can keep it in the freezer so it’s always available for last minute guests. All you have to do is buy fresh berries.
You can find the chocolate cups at any good chocolate store. Sometimes they only have the bite size cups. These are great too! You just serve more than one per person. Fill each bite size cup with a teaspoon of sherbet and top with one berry. Serve 4-5 cups per person and sprinkle more berries on the plate for a nice presentation.
Hint: Next time you walk by a chocolate store, stop and buy a box or two of these chocolate cups to make sure you always have a decadent, healthy dessert on hand.
