Mother's Day Fruit Cup

OK, so I ate the cookie already

In honor of Mother’s Day, I wanted to share a light, sweet dessert that I’ve made for my mother. There are several diabetics in my family, so I’m always looking for beautiful, low calorie (and sugar) treats to serve when we’re together. Use this as an appetizer or a dessert!

MOM’S FAVORITE FRUIT CUP
  • 4 cups fresh melons balls (use a melon ball maker or child-sized spoon to create perfect small circles that are about 1” in diameter)
  • 4 Tbsp raspberry jelly (all fruit type)
  • 4 Tbsp peach jelly (all fruit type)
  • 4 rolled wafer cookies (or similar cigar shaped cookies)
  • Mint leaves or violet flowers (optional)
  • 4 Martini glasses

    Place the jellies into separate small microwave safe bowls, add ½ -1 teaspoon water and slowly warm in microwave at 50% power (5-10 seconds at a time depending upon wattage), stirring frequently until thin enough to drizzle. Place 1 cup fruit into each martini glass then drizzle each with 1 tablespoon raspberry jelly and 1 tablespoon peach jelly.

    Stick a cookie into the side of each glass right before serving (otherwise the cookie gets soggy) and garnish with mint leaves or violet flowers (edible).

    Experiment with different types of fruits that are in season and other low sugar jellies to find different color and taste combinations.
