I love mustard. It’s a simple food. Easy to use, eager to please. It requires nothing but a twist of the jar, or squeeze of the tube. Use it plain as the hot dog’s stripe, or in the finest French cuisine.
I love to buy mustard in fancy little pots and cheerful yellow tubs. It is the ‘secret’ ingredient in my best marinade. My favorite snack is a sweet potato, hot from the microwave, at 4:30 when I’m starving at work and dinner is hours away. If I’m traveling, I bake a potato at home, or buy one out and about, spread some mustard, wrap it in tin foil, and I’m good to go!

I like to marinate my salmon (sockeye is typically good for this recipe) in a little bit of black truffle oil and some garlic (of course life is nothing without garlic) and a strong Dijon mustard. I then grill it on a soaked oak plank and serve with a papaya salsa over parmesan risotto.

For most of my life I wasn’t much of a mustard fan. Then I discovered something that satisfied my sweet tooth and wasn’t too spicy…honey mustard. Not only is it great for basting chicken (especially on the grill), but it makes a great dip for pretzels. Try thick pumpernickel or whole grain pretzels dipped in a little honey mustard. YUM!
