Tired of cooking? Try some stone soup...

For years I’ve made something I call 'stone soup'. Just like in the folk tale, I make a delicious soup out of seemingly nothing. In the children’s fable, two travelers boil a pot of water containing their magical soup stone. Villagers wishing to partake in this delight are convinced to contribute ingredients to make the soup even better. By the time it’s done, the soup truly is delicious and the magical stone is applauded.

After all the cooking and fussing over the holiday season, most of us want to spend as little time in the kitchen as possible. A quick, easy and delicious meal may be as close as the left over turkey and potatoes in your fridge. There is no right or wrong with this soup, just have fun and let everyone in the family pick something to add!

Look in your pantry, check out your leftovers, and use up those bags of vegetables in your freezer that are almost empty. Get the base up to a low boil, and then add the remaining ingredients. Cook over medium heat until everything is warmed through. Serve and enjoy!

STONE SOUP

Start with a base...

  • Prepackaged broth
  • An envelope of dry recipe-soup mix (double the water)
  • Spaghetti sauce (diluted with an equal amount water)

Add lots of vegetables...

  • Canned, fresh, frozen or dried… anything goes!
  • Recipe ready or canned tomatoes

Add a starch...

  • Cooked or raw potatoes
  • Precooked rice (add at end of cooking time)
  • Precooked noodles (add at end of cooking time)

Add protein (optional)...

  • Canned beans
  • Leftover or cooked lean beef, pork, poultry or ham (cut in small pieces)
  • Canned poultry

Taste, then add your favorite seasonings...

  • Salt and pepper
  • Poultry seasoning (for chicken or turkey)
  • Parsley, basil or Italian seasoning, garlic

The soup is never the same twice in a row, but that’s half the fun. Be creative and if you come up with a really great combination, send it to me. I love to share recipes!
